Brinjal Poriyal


  • Brinjal – 8
  • Urad dal – 1 tsp
  • Fenugreek Seeds – 1/4 tsp
  • Mustard Seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Turmeric powder – A pinch
  • Coriander powder – 1 tsp
  • Small onion – 2
  • Tomato – 1
  • Red chilli powder – 1/2 tsp
  • Curry leaves – Few
  • Corinader leaves – Few
  • Oil – Required
  • Salt – Required

How to Prepare

Total Preparation time 25-30 minutes

  1. Clean and wash the brinjals and cut them at the base of the brinjal but not till the end and keep aside
  2. Chop onion, grate coconut, chop tomato and take the juice and keep aside
  3. Heat the pan with oil, then add mustard seeds
  4. Once it crackles, add urad dal, cumin seeds, fenugreek seeds and fry for 30 seconds
  5. Then add onion, curry leaves and saute it well till onion become golden
  6. After that add turmeric powder, coriander powder, red chilli powder and fry it till raw smell goes off
  7. Then add brinjal and lemon juice, required salt and mix it well
  8. Cook them for 5 minutes in medium flame till brinjal change its colour
  9. If leaves not cooked after 5 minutes, add some water and cook for another 5 minutes
  10. Then sprinkle 2 tsp grated coconut and saute it for 5 minutes
  11. Finally turnoff the flame and transferred into a plate
  12. Now the Brinjal Poriyal is ready to serve.
