Goat Liver Fry – ஆடு கல்லீரல் / ஈரல் வறுவல்


  • Goat Liver – 500g
  • Black pepper – 1 tsp
  • Fennel seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Small onions – 5
  • Bay leaf – 1
  • Cinnamon stick – 2
  • Cloves – 3
  • Ginger – 1
  • Garlic cloves – 6
  • Red chilli powder – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Coriander powder – 2 tsp
  • Pepper powder – 1 tsp
  • Mustard seeds – 1/2 tsp
  • Coriander leaves – Required
  • Curry leaves – Required
  • Salt – Required
  • Oil – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Wash and cut livers like small cubes and keep aside
  2. Crush black pepper, grate ginger, garlic, chop coriander leaves and grind them like a paste, extract juice from lemon and keep aside
  3. Take a pan, fry black pepper, fennel seeds, cumin seeds, cinnamon stick, bay leaf, cloves, curry leaves and grind them well and keep aside
  4. Heat pan with 2 tsp oil and then add cumin seeds
  5. Once it splutters, add onions, green chillies and curry leaves
  6. Saute them till onions become translucent then add turmeric powder, red chilli powder, coriander powder, pepper powder, spice powder
  7. Saute them till the raw smell goes off, then add goat liver
  8. Fry them for 5 minutes after add 5ml water and close the lid and allow them to cook for another 5 minutes
  9. Open the lid and fry it till the liver become brown and water dried out, don’t over cook otherwise liver will become harder
  10. Finally sprinkle pepper powder and coriander leaves
  11. Now the delicious Goat liver fry is ready for serve
